Key Features:

  1. A process for preparation of ketchup from mango fruits was developed, comprising extraction of pulp by conventional methods, homogenization, addition of herbal and spice ingredients, concentration of material to a desired consistency and bottling.
  2. The ketchups were stored for 9 months with good retention of biochemical and sensory attributes.
